Victoria sponge how long last
Hey there! Sign In Register. Andy Birkenhead Posts: 12, Forum Member. I am soon to make a cake which consists of the following : Two layers of walnut Victoria Sponge, filled with buttercream, coated in buttercream and covered in fondant. How long will the cake last before going stale?
Victoria Sponge Posts: 16, Forum Member. I'm no expert on this whatsoever, but I'm going to guess - the cake will last as long as the buttercream lasts, so maybe just research that. I'm thinking it's the most perishable part of the cake. Just a guess though.

Most bakery sponge cakes have a shelf life of 5 days and supermarket sponges are full of weird preservatives to extend shelf life. It will probably be fine under fondant, brushing a simple syrup on the layers before filling will also help to keep it moist and act as preservative. To make simple syrup boil equal quantities of water or juice and sugar, boil for a minute, cool and brush onto cake layers.
The syrup soaks down and keeps the cake moist. Madeira has a much longer shelf life approx 2 weeks and is also very good cake for carving. For information on madeira cake just type in the search box 'madeira'. I made my sons 1st birthday cake on a wednesday, covered it on the thursday and it wasnt cut until 7 days later and it was absolutely perfect, still moist and tasted wonderful. Cakes not covered in fondant will keep for a few days but will start to dry out.
I am curious to hear the answer too. Scientifically proofen answer that is. My guess is first of all it depends on the cake and type of buttercream. And if you wanna know the limit as to how long someone would still enjoy eating the cake or get seriously sick My guess is for the first assuming the cake is made with smbc and stored in the fridge maybe 3 days max and for the last probably a danger to your health after 5 days, if you use American buttercream probably even 7 or more days?
Yes I don't want to poison anyone, and if I did the cake for her I would obviously want it to still be moist lovely word! I'd use American buttercream. Do you use simple syrup or anything or the sponge? If so I'd give it 3 days no problem. Fondant seals everything in quite well. Put it in a cake box and wrap that many times with cling film And then freeze it! Take it out a few hours before she collects it leaving the cling film on! Once the condensation is gone, dry the outside of the box the cling film and voila
